`site.email` is used as:

_includes/lesson_footer.html:	        <a href="mailto:{{ site.email }}">Contact</a>
_includes/workshop_footer.html:	<a href="mailto:{{ site.email }}">Contact</a>

Therefore, it does not make sense to have `mailto` in the `email` itself.
